Estudios de caso: Proteínas vegetales

¿Cuáles son los factores que impulsan y obstaculizan la adopción de productos proteínicos de origen vegetal? Hay muchos agentes implicados en las cadenas de valor que son responsables del éxito del establecimiento de alternativas de proteínas vegetales, como productores, procesadores, minoristas, inspectores y consumidores finales. En cuatro estudios de caso llevados a cabo en Alemania, Dinamarca, Polonia y España, investigamos las percepciones personales de diferentes actores del sistema alimentario sobre los productos de proteína de origen vegetal utilizando la metodología Q. Este método nos permite combinar datos cualitativos y cuantitativos para expresar los puntos de vista de forma significativa.
