Casi studio: Proteine a base vegetale

Quali sono i fattori che spingono e ostacolano l’adozione di prodotti proteici di origine vegetale? Sono molti gli attori coinvolti nelle catene del valore che sono responsabili del successo dell’introduzione di alternative proteiche a base vegetale – come produttori, trasformatori, rivenditori, ispettori e consumatori finali. In quattro studi di caso condotti in Germania, Danimarca, Polonia e Spagna, indaghiamo le percezioni personali dei diversi attori del sistema alimentare sui prodotti a base di proteine vegetali utilizzando la metodologia Q. Questo metodo ci permette di combinare dati qualitativi e quantitativi per esprimere i punti di vista in modo significativo.
